TURKEY ARTICHOKE BURGER
SECOND PLACE

For the burgers:

1 � lbs. ground turkey, 80 percent lean

1 can artichoke hearts, drained and chopped ( 1/3 cup reserved for sauce)

1/3 cup finely chopped red bell pepper

1 egg  

1 clove garlic, finely minced

� tsp. crushed red pepper

tsp. salt  

1 head Boston bibb lettuce

Nonstick cooking spray

6 to 8 ciabatta bread rolls

For the sauce:

1 tsp. fresh lemon juice

1/3 cup chopped reserved artichoke hearts

cup mayonnaise  

Salt and pepper to taste

Mix turkey, artichoke hearts, red pepper, egg, garlic, crushed red pepper and salt, and form into 6 to 8 patties. Prepare a sheet of aluminum foil with nonstick spray, and place on grill. Poke holes in foil with a fork. Place burgers on foil and cook 5 to 7 minutes on each side until burgers are no longer pink inside.

While burgers are cooking, prepare the sauce by whisking together all sauce ingredients.

When burgers are done, remove from grill. Spread sauce on ciabatta rolls, place burgers on rolls. Top with lettuce and serve.

Makes 6 to 8 servings.
